Guiltless Low-carb Gluten-Free Waffles

Sometimes you want something a little sweet but you're off sugar and definitely need to stay on track. This alternative is one of our favorites for a snack or for a meal.

These guiltless, low-carb, gluten-free waffles are soooo good and soooo easy to make, even someone who has trouble in the kitchen will find these easy to make. Just mix and pour!

 

The following portion makes about 3 waffles (depending on the size of your waffle maker). 

Ingredients you'll need:

  • 1/2 cup almond flour 
  • 2 oz. cream cheese
  • 4 eggs
  • 1 teaspoon baking powder
  • 1/3 teaspoon vanilla
  • 1/8 cup fiber yum or a bit of stevia or erythritol (optional)
  • 2 Tablespoons Functional Collagen (optional)
  • Pinch of salt (Celtic or Himalayan)

*To make 6 waffles, double the portions, etc.

Take out cream cheese to soften or put in microwave for 10 seconds. This will make the mixing easier and would eliminate chunks. If you do have chunks, they will melt while making waffles so it's not a big deal.

Mix all ingredients with a hand mixer or a blender. 

Pour into waffle maker or make pancakes. We like them as waffles the best because the waffle maker holds more batter and makes them fluffier and thicker. 

 

Suggested optional toppings (use any combination of the following):

  • Mascarpone Cheese
  • Low-carb maple syrup (1 cup Fiber Yum and 1 tablespoon of Maple extract)
  • Strawberries
  • Blueberries
  • Peanut Butter
  • Almond Butter
  • Butter
  • Powdered Xylitol (grind the granular xylitol in a coffee bean grinder to look like powdered sugar without the sugar spike)

Note on Low-carb Maple Syrup: This was the best substitution we have found. It is super easy to make and tastes just like maple syrup but doesn't give you the sugar crash like regular syrup does! It's Amazeballs! You can find the ingredients on Amazon: Fiber Yum and Pure Maple Extract.

 

Pro Tip: Each sugar alternative such as Xylitol, Fiber Yum, Stevia, etc. reacts differently in different people. The most exact thing you can do to see which ones work for you is to try one and test your blood sugar using (KetoMojo.com device) about 15 min after you have eaten the sugar substitute. This way you can find out which sweeteners work for your body and don't spike your blood sugar and which ones do.
