Keto French Toast Egg Loaf

This recipe is sooo delicious! My sister has been missing french toast ever since she reduced her sugar intake many years back. She had a major sweet tooth growing up but has long since given up things like french toast which was a double-whammy of wheat and sugar. She loved the taste, but the energy crash afterwards wasn't worth it. Ever since we started making this, she has been so excited to have the flavor of french toast back -  without the guilt, the bloating, or the energy crash. 

This is a fantastic and super simple recipe anyone can follow. Especially if you're in transition to lowering your sugar/carbohydrate intake or just in the mood for something that resembles the french toast taste. 

Ingredients: 

  • 6 tablespoons butter (144g fat, 0g carbs, 0g protein) (we prefer grass-fed butter...love Kerry Gold Brand)
  • 6 oz. cream cheese (60g fat, 6g carbs, 12g protein)
  • 6 pasture-raised eggs (30g fat, 3.6g carbs, 36g protein)
  • pinch of salt (celtic, himalayan, etc.)
  • 1 teaspoon baking powder (optional)
  • 2 tablespoons Functional Collagen (optional) (Bovine 13g protein)
  • 1/4 teaspoon cinnamon (optional)
  • 1/2 teaspoon to 1 teaspoon vanilla extract (optional)
  • Refined Coconut oil spray (total fat depends on how much or little you spray) (refined has no coconut flavor)

Total Macros for entire loaf (excluding the coconut oil spray: 234g fat, 9.6g carbs, 61g protein

Divided in 6 servings: 1 serving = 39g fat, 1.6g carbs, 10.2g protein. Very Keto.

An individual portion egg loaf would consist of 1 egg, 1 oz. cream cheese, 1 tablespoon of butter and no baking powder. You can multiply these numbers to increase portion sizes. (The macros on that would be: 27g fat, 1.6g carbs, 8g protein)

Preparation:

  • Preheat oven to Bake at 350 degrees Fahrenheit, 177 degrees Celcius.
  • Butter and Cream cheese are best blended at room temp. to avoid having chunks in the mix. We leave it out. Some people microwave for 10-15 seconds. That just depends on how you feel about microwaves. 
  • Mix ingredients above in a blender (note: you can put the cinnamon in the blender and/or sprinkle on top before placing into the oven)
  • Pour into a baking pan of your choosing. In this recipe we used a 1lb loaf pan USA which you can purchase here
  • Sprinkle the cinnamon on the top before placing into oven (or mix in the blender)
  • Bake for 20-45 minutes depending on the portions you use and depth of pan you use. We noticed that about 45 minutes works well for the portions in this recipe and the pan suggested. If you make this recipe with less portions or a more shallow pan, you will need to leave in less time. Check in at around 20 minutes (through the window, don't open the oven) to see if the top is brown or if it's still raw. Take it from there.

Suggested Toppings (use any or all):

  • Mascarpone Cheese
  • Powdered Xylitol
  • Sugar Free Maple Syrup. Check out our super simple two ingredient recipe on this one here. It's so good! Still use sparingly as it can raise your blood sugar a little if you are very sugar sensitive, diabetic, or insulin resistant.
